Vinification: Thinned grapes were harvested slightly dried to ensure adequate potential alcohol. Fermented with indigenous yeasts and repeated punch-downs for optimal extraction. Halfway through fermentation, the wine was racked and fortified to halt yeast activity.
Aging: Aged for at least 18 months in third-use French oak barriques
Bottle Aging: Minimum 12 months. Reaches peak expression after a few years.
Color: Intense ruby red, turning garnet with age
Bouquet: Aromas of ripe red fruit, plum, and wild berries
Palate: Rich and sumptuous with a slight sweetness. Pairs well with dark chocolate and cocoa-based desserts. A true meditation wine.
