Harvest: Grapes grown respecting organic certification. Manual harvest in crates with bunch selection. Harvest began in early September with Merlot and ended the first week of October with Cabernet.
Vinification: Fermentation and maceration in stainless steel tanks with indigenous yeasts. Skin maceration for 15/18 days at 28/30°C with daily pump-overs and délestage. Malolactic fermentation in steel.
Aging: Aged partly in first and second use French oak barriques and partly in steel for 18 months. Assembled and cold-stabilized naturally over winter. Bottled the following summer.
Bottle Aging: At least 12 months
Color: Deep, vibrant ruby red
Bouquet: Mature aromas of dark fruit with a fresh background; plum pulp dominates along with cherry notes and sweet spices, transitioning into hints of licorice and tobacco with balance and progression.
Palate: Full and balanced with smooth, juicy tannins, good acidity and salinity, and a mineral touch providing a long, persistent finish.
