Harvest: Grown respecting ongoing organic certifications, using biodynamic techniques. Manual harvest in the last ten days of August. Bunch selection based on ripeness.
Vinification: Pre-cooled grapes were whole-cluster pressed in the absence of oxygen using extremely gentle pressure. Cold-settling of must for 24 hours to remove vegetal components. Fermentation in stainless steel tanks at controlled temperatures with indigenous yeasts. Spontaneous malolactic fermentation in steel. Wine aged on fine lees for 5 months in steel.
Aging: Bottled at the end of winter and released in early spring. Certified organic by ICEA.
Color: Pale pink with onion skin hues
Bouquet: Aromas of fresh and ripe fruit such as peach and melon, with light floral notes of rose.
Palate: Fruit-forward with elegant acidity and salinity, giving the wine a uniquely full and persistent character.
