Harvest: The grapes were grown respecting organic certification standards, using biodynamic techniques. Hand-harvested into 15 kg perforated plastic crates. Bunches selected by ripeness.
Vinification: Grapes were pre-cooled, then gently destemmed and pressed. Cold settling of must followed by temperature-controlled fermentation with indigenous yeasts. Spontaneous malolactic fermentation in steel. After fermentation, wine is aged on fine lees in steel for 6 months. A small part ferments in barrique.
Aging:
Bottled in spring following the harvest and released in early summer. Certified organic by ICEA.
Color: Bright straw yellow with green highlights
Bouquet: Aromas of ripe fruit including banana, pineapple, and apple, with pronounced minerality on the palate.
Palate: Savory, harmonious, and balanced.
