Manual harvest in plastic crates. Bunch selection based on ripeness, early October.
Vinification: Grapes cultivated using biodynamic techniques. Fermentation and maceration in stainless steel tanks with indigenous yeasts. Maceration on the skins for 15–18 days at 28–30°C, with daily pump-overs and délestage. Malolactic fermentation in steel.
Aging: Aged in French oak barriques (first and second passage) for 18 months. Then blended in steel and naturally cold-stabilized during winter. Bottled the following summer.
