Le Pergole, Chestnut Honey - Linden Honey - Melata (Honeydew) - Acacia
Chestnut Honey
It is only from wild varieties of the chestnut that honey is
obtained. The bees collect the pollen from the male flowers,
which are so rich in pollen that the wind is the main agent
of pollination.
Thus chestnut honey is very rich in pollen, which gives it a
very strong flavour.
It is also very rich in tannin. It is produced all over Italy,
from the Alpes to Sicily.
Colour: dark
Aroma: pungent
Crystallisation: very slow when pure, or when blended
with acacia honey; when it is blended with the honey of forest
or meadow flowers, the crystals are coarse and compact
Because of its dark appearance it may be confused with melata
(honeydew) honey, from which it can be distinguished by its
characteristic aroma and its spicy and sometimes rather bitter
flavour.
Mixed in even modest quantities with light honey it loses its dark
colour. It is pleasant when diluted or mixed in small quantities with
pale honey.
It is extracted by natural methods, and is unprocessed.
Linden Honey
It is produced in lime woods in the month of June.
Colour: pale amber, often with grey-green tones
Flavour: rather heavy, penetrating and persistent,
slightly rasping in the throat
Aroma: delicate, but characteristic of the flowers
Crystallisation: for the most part slow and irregular; often forming
large crystals
This honey is particularly good for hot expectorant tisanes
and efficacious in treating colds.
It is extracted by natural methods and is unprocessed.
Melata (Honeydew)
A dark coloured resin honey with a strong flavour, rich in minerals
and with a high acidity level.
It is extracted by natural methods and is unprocessed.
Acacia
The best known is from the forests of old trees in the subalpine
zones of Piedmont and Lombardy, but it is to some extent produced
everywhere: in any area where the trees, no longer pruned
every three years, age and bear nectar.
Colour: translucent white
Flavour: light and delicate, recalling the sweetness
of ripe fruit
Aroma: light and fleeting, like the perfume of the
lime flowers
Crystallisation: very slow, even after two years; a
white paste forms, firm but not hard; the crystals are rather
opaque and easily dissolved.
According to the popular pharmacopea it has strengthening properties.
It detoxifies the liver, is anti-inflammatory for the throat and
slightly laxative.
This honey is much sought after for its delicate, uncloying taste.
It sweetens without altering flavours or aromas. It does not make
tisanes cloudy.
It is extracted by natural methods and and is unprocessed.
